🥬 Ingredients
For the Burger Patties
- 4 cups cooked short-grain brown rice
- ½ red onion, finely diced
- 2 tablespoons nutritional yeast flakes
- 1 garlic clove, minced
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1½ teaspoons salt
- 1 tablespoon maple syrup
- 2 teaspoons Italian seasoning
- 1 cup finely chopped mushrooms
- 1 (14-ounce/398 mL) can black beans, drained and rinsed
- 1 cup raw beet, shredded
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon smoked paprika
- ½–¾ cup raw sunflower seeds, finely ground
- 1½ tablespoons tomato paste
- Salt and black pepper, to taste
For Serving
- 10 burger buns
- Vegan mayonnaise, optional
- Lettuce leaves
- 1 large tomato, sliced
- ½ red onion, sliced or pickled
- Your favorite burger toppings and condiments
👩🍳 Instructions
- Preheat the oven to 375°F.
- Sauté the onion. Place the diced red onion in a skillet over medium-low heat. Cook for about 5 minutes, until softened.
- Prepare the burger mixture. In a large bowl, roughly mash the black beans. Add the cooked brown rice, sautéed onion, garlic, nutritional yeast, seasonings, maple syrup, mushrooms, shredded beet, tomato paste, and ground sunflower seeds.
- Mix well. Stir until the ingredients are thoroughly combined. The mixture should be moist but firm enough to shape. Add additional ground sunflower seeds, a tablespoon at a time, if the mixture is too wet.Food Processor Option: Add all ingredients except the mushrooms to a food processor. Pulse several times until combined but still slightly textured. Transfer to a bowl and fold in the chopped mushrooms.
- Shape the patties. Divide the mixture into 10 portions and form into large burger patties.
- Bake. Place the patties on a parchment-lined, rimmed baking sheet. Bake for 30–35 minutes, or until the patties are firm and golden brown on the bottom.
- Serve. Lightly toast the buns. Place a burger patty on each bun and top with lettuce, tomato, onion, vegan mayonnaise, and your favorite burger toppings.
