This hearty three-bean chili is packed with beans, tomatoes, and flavorful spices. Refried beans help create a thick, satisfying texture, while optional bulgur wheat adds a delicious meat-like texture. It’s an easy one-pot meal that’s perfect for a cozy lunch or dinner.
Ingredients
- ½ cup onion, finely diced
- 3 cloves garlic, minced
- 2 splashes low-sodium vegetable broth, for sautéing
- ¼ cup dry bulgur wheat, optional
- 1 (8-ounce) can no-salt-added tomato sauce
- 1 (15-ounce) can petite diced tomatoes
or ½ (10-ounce) can Ro-Tel Chili Fixin’s, to taste - 2 cups low-sodium vegetable broth
- ½ (15-ounce) can fat-free refried beans
- 3 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 2 (15-ounce) cans pinto beans, drained and rinsed
- 2 (15-ounce) cans dark kidney beans, drained and rinsed
- 1 (15-ounce) can light kidney beans, drained and rinsed
Instructions
- Sauté the onion: In a large pot, heat a small amount of vegetable broth over low-medium heat. Add the diced onion and sauté until translucent, about 3–5 minutes.
- Add the garlic: Stir in the minced garlic and cook for about 30 seconds, until fragrant.
- Add the bulgur: If using bulgur wheat as a meat substitute, stir it into the onion mixture and cook for a few minutes.
- Build the chili: Add the tomato sauce, diced tomatoes or Ro-Tel, vegetable broth, chili powder, cumin, paprika, oregano, garlic powder, and salt.
- Add the refried beans: Stir in the refried beans. Use a potato masher to break them up and incorporate them into the chili. This helps thicken the broth and gives the chili a hearty texture.
- Add the beans: Stir in the drained and rinsed pinto beans, dark kidney beans, and light kidney beans.
- Simmer: Bring the chili to a gentle boil. Reduce the heat, cover, and simmer for 15–30 minutes, stirring occasionally.
- Taste and serve: Taste and adjust the seasonings as desired. Serve warm with your favorite chili toppings.
