Whole-Wheat Oat Dinner Rolls

These soft and wholesome dinner rolls combine whole-wheat flour, quick oats, and yeast with a touch of honey for a lightly sweet, hearty roll. They’re delicious served warm alongside soups, stews, salads, or your favorite main dish.

Ingredients

  • 2 cups hot water
  • 1½ tablespoons active dry yeast
  • ¼ cup honey
  • 2 teaspoons salt
  • ¼ cup Simple Butter
  • 2 tablespoons vital wheat gluten, optional
  • ½ cup quick oats
  • 5–6 cups whole-wheat flour

Instructions

  1. Activate the yeast: In a large mixing bowl, combine the hot water, honey, and yeast. Stir well and let stand for 5 minutes.
  2. Make the dough: Add the salt, Simple Butter, vital wheat gluten, oats, and 3 cups of the whole-wheat flour to the yeast mixture.
  3. Mix: Using an electric mixer, beat the mixture for 6–8 minutes until well combined.
  4. Add the remaining flour: Add the remaining whole-wheat flour 1 cup at a time, mixing with a spoon after each addition.
  5. Knead the dough: When the dough becomes too thick to stir, transfer it to a lightly floured surface. Knead by hand for approximately 10 minutes, adding additional flour as needed. The dough should become elastic and smooth without being overly sticky.
  6. First rise: Lightly grease a large bowl. Place the dough in the bowl and turn it once so the surface is lightly coated. Cover with a clean towel and place in a warm location. Let the dough rise for approximately 40 minutes, or until doubled in size.
  7. Shape the rolls: Punch the dough down and transfer it to a lightly floured surface. Knead a few times, then divide and shape the dough into dinner rolls. Place the rolls in a greased 9 × 13-inch baking dish.
  8. Second rise: Cover the rolls and let them rise for approximately 30 minutes.
  9. Bake: Preheat the oven to 350°F. Bake the rolls for approximately 30 minutes, or until lightly browned and cooked through.
  10. Cool: Remove the rolls from the baking dish and transfer them to a cooling rack.
